I'm not saying you're getting the equivalent of a plate of vegetables, but for a cookie this is a leap in the right direction. And they're so easy, too!
CHOOKIES
Ingredients: (makes approx. 15)
50 grams/5 tablespoons melted butter
1/3 cup dark brown sugar
1/4 cup granulated sugar
5 tablespoons cocoa powder
1/3 cup low fat plain yogurt
1 teaspoon vanilla
1 cup plain flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Method:
Pre-heat oven to 180ºC (160º fan oven)/350ºF
Put melted butter in a medium bowl, add dark brown sugar, granulated sugar and cocoa. Use a large spoon to mix well. Add yogurt and vanilla - mix. Add flour, baking powder and salt. Mix well.
Cover your baking tray with baking/greaseproof paper or with a light coating of non-stick cooking spray. Spoon balls of dough onto tray, about a tablespoon each. Flatten slightly with your finger.
Bake for about 14 minutes. Cool. Try to eat just one.
