Too Cold!  So, it's Soup...

Came in the door 20 minutes ago and it's SO COLD!  Too cold to take off my coat.  So, I will turn the heat on, make some soup, and heat up outside and in.






COLD DAY SOUP
1 butternut squash, peeled & diced
1/2 head of cauliflower, broken into florets
2 stalks of celery, diced
2 small-medium onion, diced
4 cloves garlic, in their skins
10 sage leaves, ripped
sprinkling of ground ginger
sprinkling of ground coriander
pinch sea salt
3 twists black pepper
1/4 teaspoon cayenne pepper
1/2 cup + 3/4 cup water


Prep squash, cauliflower, celery, and onions.  Put them all together in a baking tray - you don't need any olive oil.

Put in the garlic cloves - whole - you don't need to peel, yet, or mince.  Tear up the sage leaves and toss in.  Sprinkle the ground ginger and coriander over.   I'd guess about a 1/2 teaspoon each?  Just sprinkle; it doesn't have to be exact.  Add a pinch of sea salt and a few twists of black pepper.  Pop the whole tray into the oven at 200ºC/400ºF for about 15 minutes.  Check to make sure cauliflower doesn't get too browned - toss veg around and add about a 1/2 cup of water.  Cook for another few minutes, then put into a large bowl or pot.

The skin from the garlic should come off easily.  Just cut off the root end and squeeze out the roasted garlic.  Use a hand blender to puree all the veg.  - add another 3/4 cup of water.  Once you're happy with the consistency, serve it up!  I like to add some cayenne pepper for a bit of a kick - do this while you're pureeing - start with a 1/2 teaspoon, taste and add more if you like.  

Now - the house is warm, the coat comes off and I'm toasty, too!  On to the next thing...
