RED PEPPER RELISH
2 red bell peppers
3 habanero peppers
juice of 1 lemon
1/3 cup Certo (apple pectin)
1/3 cup apple juice
Dice the bell peppers and the habaneros - be careful! They will leave a spicy oil on your hands. Use kitchen gloves if you have them or hold the pepper with a piece of cling film. Dice finely and put into a saucepan. Add the lemon juice and apple juice. Boil for a few minutes. Blend. You can either use an immersion blender or pour contents into a blender/food processor. Return ingredients to saucepan and add Certo (a pectin for jam making - made from apples instead of using sugar). Boil for another few minutes. Put into a clean jar with a lid and cool in the refrigerator. This won't get as thick as a jelly but will be a looser relish.
A relish like this can make an otherwise simple dish exciting. So if you need to make a plate of veg compelling, spice it up!
