Lemon Lovelies
Ingredients: (makes 12-15 cookies)
5 tablespoons melted butter
1/4 cup sugar
1 teaspoon lemon zest
juice of 1/2 a lemon
1/3 cup low fat natural yogurt
1 teaspoon vanilla
1 cup coarse wholewheat flour
1 teaspoon baking powder
1/4 teaspoon salt
Heat oven to 180ºC/160ºC fan oven/350ºF
In a single mixing bowl, whisk melted butter, sugar, zest and juice, yogurt and vanilla until light. Add flour, baking powder and salt. Now use a large spoon to mix all ingredients together.
Line a baking tray with parchment/baking paper and drop rounded spoonfuls of dough onto baking sheet.
Bake for 10-12 minutes - edges should lightly brown. Cool.
Pop into mouths and lunch boxes without guilt!
