Chicken Souvlaki (grilled chicken skewers with a greek flavour)
INGREDIENTS:
4-5 Chicken breasts, cut into chunks - 1-2 inches thick
Zest and juice of 1/2 lemon
2 garlic cloves
1 tablespoon oregano
2 tablespoons olive oil
Salt & pepper
1/2 cup low-fat greek or natural yogurt
Cherry tomatoes
2 Red onions
2 Red peppers
(the vegetables can be changed to your preferences)
Tzatziki (yogurt, garlic, and cucumber sauce)
Serve with pita bread or rice
METHOD:
Cut chicken into chunks. Mince garlic. Zest and juice lemon.
In a medium to large bowl, add yogurt, olive oil, garlic, lemon zest and juice, oregano, and salt and pepper (pinch and 2 twists). Whisk to combine. Add chicken pieces and stir to coat. Put in the refrigerator to marinate for 1/2 hour +. (Instead of a bowl, you can also put all of those ingredients in a large ziplock plastic bag and shake.)
Cut onions and peppers into large chunks.
Make tzatziki - stir together 3/4 cup yogurt, lemon juice (2nd half of lemon), 1 clove minced garlic, 1/2 grated cucumber and a good pinch of sea salt. Set aside, allowing flavours to blend.
Prepare skewers: alternate pieces of chicken, tomatoes, onions, peppers. (My tomatoes were small, so I just tossed them in alongside.) Put on a baking tray/dish and cook for about 10-12 minutes. Transfer to grill to finish for 5 minutes. (You can cook on grill for entire time - but I like to do it this way to ensure chicken cooks thoroughly without drying out.)
Serve with tzatziki, over rice or in pita bread.
