Pears are so versatile - breakfast, lunch, dinner, starters, main course and desserts! Let's start simply, add this salad to your dinner tonight or your lunch tomorrow and add a lot of goodness.
PEAR SALAD
Variety of baby leaf lettuce (nice to include something with a peppery flavour, like rocket)
1 pear (ripe, but not too - should be firm), cut in this slices (no need to peel)
1/2 avocado, peeled and cut into bite-sized chunks/slices
prosciutto/serrano ham, a few small torn pieces
goat cheese to sprinkle
1 tablespoon vinaigrette
VINAIGRETTE:
3 tablespoons extra-virgin olive oil
2 tablespoons white wine or sherry vinegar
3 tablespoons orange juice
1 teaspoon dijon mustard
salt & pepper
Mix vinegar, orange juice, mustard, s & p - slowly whisk in the olive oil. Store in an air-tight container.
