Equally important, this salad tastes like more. By adding beans to your greens, you're not only adding nutrition, you're adding texture and flavour as well - and when it's good, you'll have it more often. This is one savvy salad!
Greens with Beans Salad
Ingredients:
1 can borlotti beans*, drained & rinsed (try to get beans in water, but if salt added, be sure to rinse well)
1 tablespoon fresh oregano, chopped fine
1 tablespoon fresh sage, chopped fine
2 medium tomatoes, chopped
1/4 of a block of feta cheese (50 grams/1.5 ounces), crumbled (crumbling spreads the flavour of the cheese so you don't need as much)
3/4 tablespoon olive oil
juice of 1/2 lemon
2-3 large handfuls of mixed salad greens
Drain and rinse beans - put into a bowl. Add diced tomatoes, sage & oregano and crumble feta over. Toss with spoon. Sprinkle with olive oil and squeeze lemon juice - toss again to thoroughly mix. Serve over large handful or two of salad greens.
*borlotti beans are also known as cranberry beans or fagioli beans
